Experimental mixology with Leon Foong

For anyone who enjoys the thrill of trying out a new taste or coming out with your own lethal concoction, here is the perfect place for you. Mixology can be embraced by everyone who has imaginaton and a passion for adventure.

Few of my personal favourites:

1) Enchante Rush

Ingredients:
2 shots vodka, 100ml Enchante, 1 part mint & sugar reduction

First break up some mint leaves (handful) and scatter it into a glass with half a teaspoon of sugar, grind it with a pestil.

Following which, add 2 shots of vodka (preferably chilled in a freezer before) and top it up with Enchante to your liking.

Serve in a tall glass

2) Leon Sing Foong's interpretation of the pornstar martini

Ingredients:
35ml Vanilla Vodka, Vanilla pods, 70ml prosecco, 25ml Passoa, 35ml Passion fruit juice, puree, Fresh passion fruit, teaspoon of lime juice,

First, add some ice into a shaker. Add the vanilla vodka, passoa, blend of passion fruit juice and puree. Shake it vigorously and pour it through a strainer into a martini glass which should be chilled before hand.

Cut a passion fruit into half and suspend it on top of the liquid. Lace the top of the martini with some lime juice and sprinkle with vanilla pods.

Rim another double shot glass with passionfruit flavoured salt (or any other appropriate fruit salt). Fill it to the top with prosecco.

The prosecco is meant to complement the martini, offering the palate a perfect balance between the sweet richness of the passion fruit conconction and the crisp refreshing taste of the prosecco.

Ready to serve.

While the first one is fairly simple, the second recipe is slightly more complicaetd. However please don't be afraid of trying it as the results definitely do warrant the effort.
